1 large onion, chopped, or 1/2 package frozen chopped onions
1/4 cup cooking oil
2 cans #303 or #2 green beans
1 bananna pepper, or 1/2 green pepper chopped
1 heaping tablespoon paprika
8 ounces tomato sauce
dash of salt, and pepper
1/2 tsp peppermint leaves, crushed
In medium saucepan, simmer onion in approx 1/4 cup vegetable oil until soft and transparent. Add pepprs, paprika and tomato sauce, mint, salt and pepper. Simmer for 10 minutes. Add green beans, and simmer on low for approximately 1/2 hour, or bake at 350 for 1/2 hour in shallow casserole.
