Loukahvesmo (garlic pepper sauce)

12 bananna peppers, hot or sweet
4 cloves garlic
1 Pound 12 oz can broken or crushed tomatoes
1/2 cup olive oil
2 stalks celery
4 - 5 medium onions
salt to taste
1 heaping tsp paprika
1 tbs fresh parsley
1 tsp peppermint leaves crushed

Chop peppers, crush or dice garlic, chop onions and celery and saute all in oil. When all vegetables are soft, add remaining ingredients, and cook until tomatoes become saucy and thick.

Serve as a side dish or over rice.
